Liquor License for New Italian Restaurant Approved

An outdoor dining patio, acoustic music, large-screen TVs ... oh, and great food, too.

That what was promised to the Sudbury Board of Selectmen Tuesday night when co-owners Greg Hill and Chris Stephens went before the Board to apply for a liquor license for their restaurant, No. 29 Sudbury.

"I'm tired of driving to Boston for a good meal ... no disrespect to those preparing food in Sudbury (today)," said Hill, better known as "The Hillman" on WAAF 107.3 FM. "(We want to bring) higher-end Italian food with a great atmoshere."

Construction of the restaurant located at the 29 Hudson Road plaza should be completed in about two months and will have 130 seats.

Attorney Caroline O’Connell told the Board all servers will be TIPS certified and the restaurant will be up to date with all liquor laws.

"But what are you going to bring to Sudbury," Selectman John Drobinski asked.

Hill promised fine Italian dining by executive chef Evan Deluty who owns Stella in Boston's South End.

"I live in Stow but I was born in Sudbury and we'd be community-oriented," he said. "We would get involved with charities."

The target opening date is for the end of May with the hope of allowing customers to dine on the patio.

Hill also asked for the approval of an outdoor pizza oven.

"It sounds attractive," Chairman Larry O'Brien said of the plan for the new restaurant.

The Board unanimously approved the license.
